If EIGH stands for A as in Neighbour

If TTE stands for T as in Gazette

If EAU stands for O as in Plateau

Then the right way to spell POTATO should be….

GHOUGHPHTHEIGHTTEEAU

Of course, many children aren’t likely to spell potato this way but they might just add an ‘e’ on the end. They wouldn’t be alone either as the cringe worthy moment below shows adults can get muddled too.
